I think it was the afternoon I took a bite out of a duck confit crostini with fig jam at the third day of a food+eating festival that I wholeheartedly decided I would never be a food critic. I was just not cut out for the job.

We’ve all been there. Having that thought of wouldn’t it be the best job in the world to be paid to eat?

But with such glory comes with a price.

Strawberry green smoothie

Morning lovelies,
I hope you’re all having a wonderful day.
I woke up today craving a smoothie, so I made one filled with spinach,strawberries,banana and date. I happily slurped and munched on carrot sticks on the side(beware I can eat a whole large carrot if its chopped into sticks)
Now that’s spring break, I get two weeks to just relax, do some reading, take my time in the morning(no oatmeal hurriedly stuffed into a reusable Starbucks cup).
I’ve always been keeping up with my goals; I’ve been running more now that the weather is so nice, and going to yoga classes.

Its amazing how much good a break can do.  I feel so much happier already:)
If you’re not in school, its important to schedule in some me time for yourself. Or doing little daily things that relax you; maybe it’s going for a walk at the end of the day or making a tea latte and reading.
Anyways I love to share this recipe with you. Only a few ingredients and its vegan/dairy free and sugar free because that’s just how I roll. And it put a big smile on my face.

Strawberry greens smoothie(serves 1)
-1/4 cup(60ml) canned full fat coconut milk
+240ml water
-1 cup spinach
-1 cup frozen or fresh strawberries
-1/2 a banana
-1 medjool date(soft makes it easier to blend)
-spoonful of hemp hearts(optional; boost of omega 3s,protein and fibre)
***
Blend everything up, add more water to your preferred consistency.

This smoothie is wonderfully sweet and you can really taste/smell the strawberries because were adding a whole cup in there:) Strawberries only have about 6 grams of natural fruit sugars per a cup or so.
And did you know the iron in spinach is a lot easier to absorb when paired with vitamin c? Vitamin c helps us combat colds and disease which does make life a little easier.Iron is especially important for women because iron deficiency(anemia)can lead to fatigue and weakness.

Healthy-Stress Free recipes: Carrot Coconut soup

Now that things are winding down a bit, and the weather is getting colder, it’s a perfect time for comfort food like soup. I love making homemade soup because it’s much more economical and delicious. The recipe I’m sharing today is super easy and requires few ingredients that you probably already have. You can adjust or add spices to your taste. I know a lot of people are a fan of making big batches and freezing, but personally I like making a small batch(if it’s just for me) and then finishing it over the next few days. Healthy- Stress- Free Recipes: Savoury Oatmeal

Hey guys,

I thought I would share with you a super easy and quick recipe that you can make for breakfast,lunch,dinner or a snack.

When you think of oatmeal, you usually think of berries,diced apples,cinnamon and brown sugar, but oatmeal doesn’t always have to be sweet!

This recipe is literally just oats and an egg and whatever toppings or garnishes you desire!

If you’re chinese or Cantonese you may be familiar with the soupy rice porridge, congee. This is the healthier and faster copycat version.

Savoury Oatmeal(serves 1)

-1/2 cup oats(I used old-fashioned or large flake)

-1 cup water

-1 egg

-soy sauce or other garnishes such as crispy dried onions, green onion(scallion), salt/pepper,seaweed,or bonito flakes (optional)

1.Place your oats and water in a small or medium pot and bring to a boil then to simmer

2.Simmer for 3-5 minutes until the oats are cooked. Stir and taste along the way for your desired consistancy.Serve in a bowl.

3.Meanwhile preheat a pan on medium heat.Add a dash of oil and break the egg into the pan.Cook until the edges of the egg is solid and browned a little. Flip the egg and let it cook for a few seconds, then serve it on top of your oatmeal.

4.Put ony our desired toppings and enjoy!

Tip:

You can also poach the egg if you want to. Bring 2-3 inches of water in a pan to a boil. Add about 5ml of white vinegar. Using a wooden spoon  stir in a rapid circular motion in the pan. Crack egg into the pan.Bring to simmer and cook for about 3 minutes. Using a slotted spoon, carefully lift up the egg. Get rid of excess water and serve.
