I woke up today craving a smoothie, so I made one filled with spinach,strawberries,banana and date. I happily slurped and munched on carrot sticks on the side(beware I can eat a whole large carrot if its chopped into sticks)
Now that’s spring break, I get two weeks to just relax, do some reading, take my time in the morning(no oatmeal hurriedly stuffed into a reusable Starbucks cup).
I’ve always been keeping up with my goals; I’ve been running more now that the weather is so nice, and going to yoga classes.
Its amazing how much good a break can do. I feel so much happier already:)
If you’re not in school, its important to schedule in some me time for yourself. Or doing little daily things that relax you; maybe it’s going for a walk at the end of the day or making a tea latte and reading.
Anyways I love to share this recipe with you. Only a few ingredients and its vegan/dairy free and sugar free because that’s just how I roll. And it put a big smile on my face.
Strawberry greens smoothie(serves 1)
-1/4 cup(60ml) canned full fat coconut milk
-1 cup spinach
-1 cup frozen or fresh strawberries
-1/2 a banana
-1 medjool date(soft makes it easier to blend)
-spoonful of hemp hearts(optional; boost of omega 3s,protein and fibre)
Blend everything up, add more water to your preferred consistency.
This smoothie is wonderfully sweet and you can really taste/smell the strawberries because were adding a whole cup in there:) Strawberries only have about 6 grams of natural fruit sugars per a cup or so.
And did you know the iron in spinach is a lot easier to absorb when paired with vitamin c? Vitamin c helps us combat colds and disease which does make life a little easier.Iron is especially important for women because iron deficiency(anemia)can lead to fatigue and weakness.
